The master butcher-charcutier at the Four Seasons Hotel in Washington, D.C., Marco Pauvert oversees the preparation of all charcuterie food items and the portioning of all meat and seafood items. Before joining the Four Seasons in 2011, he owned and operated multiple butcher shops and meat stores including The Epicurean in Denver, Colorado, and the three-location Charcuterie Francaise in Greater Philadelphia. As owner/operator of Philadelphia’s Pour Vous in the late 1980s and early 1990s, Marco Pauvert received a “Best Butcher” honor in Philadelphia Magazine.
Over the course of his career, Marco Pauvert has also garnered “VIP Butcher” honors at the Washington D.C. International Wine & Food Festival and participated in the national Cochon 555 culinary competition on ten occasions. Mr. Pauvert’s achievements at Cochon 555 include butchering an entire pig in just 23 minutes, shattering the former record of 58 minutes and establishing an official record that still stands today.
